I’m making a pork roast for dinner, and I’d like to do a homemade applesauce with it. I made some really great applesauce with red rome apples last fall, but I can’t seem to find any of those this time of year. Any suggestions for a good type of apple to use? I don’t put sugar in it, so I find granny smiths are a little tart. I like eating fuji apples, but I know they aren’t great for cooking. Any advice?

Am an old Mainer here and I highly recommend McIntosh apples for your apple sauce. I make it often and do it either on the stove top or crock pot. It truly is terrific. For a simple twist on your apple sauce try using 3/4 mac’s and two Pink lady apples….Yum !!!!!

Hope this help. If the apples are sweet, I don’t think you need to put sugar in it.
APPLE TREESCrab Apple: This small red apple, about 1 1/2 to 2 inches in diameter, has a sweet-sour taste. Peak season is November to December. Select fruit that has a pleasant aroma and no bruises. Crab apples are served cooked, not raw.
Lady Apple: An apple the size of a table-tennis ball that is red to yellow in color. Fruit has a smooth, firm surface and a sweet-tart taste. Peak season is November to December. Select fruit without bruises; serve raw or cooked.
Fast and Low Fat Applesauce:
Prep: 5 minutes
Cook: 20 minutes
Make 6 servings
Zap it! To microwave, decrease the water to 1/4 cup, and put all the ingredients in 2-quart microwavable casserole. Cover tightly and microwave on High for 10 to 12 minutes, until apples are tender. With a scroop of vanilla ice cream, and sprinkle of cinnamon-sugar, it makes a great dessert.
Ingredients:
4 medium cooking apples (1 1/3 pounds), peeled and cut into fourths
1/2 cup water
1/4 cup packed brown sugar or 3 to 4 tablespoons granulated sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
Methods:
1. Heat apples and water to boiling in 2-quart saucepan over medium heat, stirring occasionally; reduce heat. Simmer uncovered 5 to 10 minutes, stirring occasionally to break up apples, until tender.
2. Stir in remaining ingredients. Heat to boiling. Boil and stir 1 minute.
Slow Cooker Directions:
Decrease water to 1/4 cup. Mix all ingredients in 3 1/2- to 6-quart slow cooker. Cover and cook on high heat setting 1 hour 30 minutes to 2 hours or until apples are tender; stir.

Try a Bramley, a true cooking apple. For a sweeter flavor Cox’s Orange Pippin. (I am drooling at the thought of it).

I suggest Granny Smith or McIntosh. Granny Smith are OK for applesauce but as you said the are a little tart without sugar and they go better in Apple Crisp. So I would recommend McIntosh apples, they are very sweet and would taste great.
APPLE TREESFuji apples like you said are not great for cooking so I would really reccomend anything but those.

Well i have made some and i use yellow apples because they r sweet and give it this great flavor.they r also very jucy wich is a big plus in making applesauce.
