I’ve substituted the other way around (orange juice when the recipe called for lemon juice) and didn’t alter the sugar at all. Now, I’ve never had Jewish Apple Cake; so I don’t know how sweet it’s supposed to be. It might be easier to guesstimate if you posted how much orange juice the recipe calls for.

Depends on the amount of juice you are substituting. If it is just a teaspoon up to 1/4 of a cup, I wouldn’t add additional sugar. If it is more than 1/4 of a cup, try adding 1 tsp of sugar for each 1/4 cup, or 4 tsps of sugar for every one cup of lemon juice.
