Keep the height you want and pruned it in spring. It usually takes 3 years to have fruit when grow from a pip. And it doesn’t necessary has the same flavor as the original one. Apple tree needs 2 trees to cross pollination. If your neighbor has one, that is fine. You may also graft other apples on this tree, so that you will have a cocktail apple tree with 2-3 different apples on one tree.

If you have room for it to grow, don’t do anything but feed and water it. The bottom leaves will fall off when they are ready and you certainly don’t need to prune the top unless space is a consideration. And then, only as much as necessary.
