Wrong type of apple for baking. Try a harder apple like a Granny Smith or Empire or Fuji.
…..” Gravenstein, Braeburn, Fuji and Pink Lady Apples are all crisp and sturdy, as well. Red Delicious and Golden Delicious, despite their promising names, are not good choices for baking, and neither are Gala and Cortland, since they tend to become mealy in pie fillings.” from link

Use a Granny Smith ( the really green ones) and bake it less time then they tell you too. Also you could cut the apples bigger. I always cut them into quarters, core them and then cut them into thirds.

My trick (atleast it works for me) is to lightly dust the apple slices with cornstarch and a light dusting of AP flour. It helps suck up the juice rather than the apples taking them in and becoming too soggy. Hope it works.

By nature Goldens are the softest of apples so you would almost guarantee that you get apple sauce when baking a pie. I suggest using greener apples. Apples like granny smiths, wine sap, and Johnathan work best in pies, they have a firm flesh. Add a little lemon juice to the bowl you put apple slices in before you cook to prevent browning and be sure to remove any excess lemon juice before baking.

Granny smith apples are for pies. Also- try baking your crust a little before you put in filling then add filling and bake- this will take out some of the cook time and keep them even more crispy
