Baked apples are delicious with whipped cream or ice cream.
APPLE TREESClean and core the apples with a coring tool. Lightly score the skin around the middle of each apple to keep them from exploding as they expand in the oven.
Place the apples into a baking dish and fill each hole with brown sugar and then cover with raisins. It’s OK if the raisins spill over into the dish, you might like to have some extra. Add about a quarter of an inch of water into the bottom of the dish.
Bake uncovered in a 350 to 375-degree oven until done; about 30 to 45 minutes depending on the apple type and size. They are done when somewhat soft to a fork poked into the body on top.

Crunchy Caramel Apple Pie
APPLE TREESIngredients
Pastry for Single-Crust Pie (see below)
1/2 cup sugar
3 Tbsp. all-purpose flour
1 tsp. ground cinnamon
1/8 tsp. salt
6 cups thinly sliced, peeled cooking apples
1 recipe Crumb Topping
1/2 cup chopped pecans
1/4 cup caramel ice-cream topping
Directions
1. Preheat oven to 375 degrees F. Prepare Pastry for Single-Crust Pie. On a lightly floured surface, roll out dough to a 12-inch circle. Transfer pastry to a 9-inch pie plate. Ease pastry into pie plate, being careful not to stretch pastry. Trim; crimp edge as desired.
2. For filling: In a large mixing bowl stir together sugar, flour, cinnamon, and salt. Add apple slices and gently toss until coated. Transfer apple mixture to the pastry-lined pie plate. Sprinkle with Crumb Topping. To prevent overbrowning, cover edge of pie with foil.
3. Bake for 25 minutes. Remove foil. Bake for 25 to 30 minutes more or until top is golden. Remove from oven; sprinkle pie with pecans, then drizzle with caramel topping. Cool on a wire rack. Makes 8 servings.
4. Pastry for Single-Crust Pie: In a bowl stir together 1-1/4 cups all-purpose flour and 1/4 teaspoon salt. Using a pastry blender, cut in 1/3 cup shortening until pieces are pea-size. Using 4 to 5 tablespoons cold water total, sprinkle 1 tablespoon of water at a time over the flour mixture, tossing with a fork until all of the dough is moistened. Form dough into a ball.
5. Crumb Topping: Stir together 1 cup packed brown sugar, 1/2 cup all-purpose flour, and 1/2 cup quick-cooking rolled oats. Using a pastry blender, cut in 1/2 cup butter or margarine until the topping mixture resembles coarse crumbs.
Cheesy Apple Pie
Ingredients
1 cup all-purpose flour
1/4 teaspoon salt
1/3 cup butter-flavored shortening
1/2 cup finely shredded cheddar cheese
3 to 4 tablespoons cold water
5 cups thinly sliced, peeled tart cooking apples (such as Granny Smith or Rome Beauty) (about 2 pounds)
3/4 cup sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon salt
Cheddar Crunch Topping
Directions
1. Preheat oven to 375 degrees F. In a medium bowl, stir together the 1 cup flour and 1/4 teaspoon salt. Using a pastry blender, cut in shortening until pieces are pea-size.
2. Stir in cheese. Sprinkle 1 tablespoon of the cold water over part of the cheese mixture; gently toss with a fork. Push moistened dough to side of bowl. Repeat moistening flour mixture, using 1 tablespoon of the cold water at a time, until all of the flour mixture is moistened. Form dough into a ball.
3. On a lightly floured surface, use your hands to slightly flatten dough ball into a disk. Roll disk from center to edges into a circle about 12 inches in diameter. Line a 9-inch pie plate with pastry circle. Trim to 1/2 inch beyond edge of pie plate. Fold under extra pastry and flute or crimp edge. Do not prick pastry. Set aside.
4. In a large bowl, combine apples, sugar, the 2 tablespoons flour, cinnamon, and 1/4 teaspoon salt. Spoon into dough-lined pie plate.
5. Sprinkle Cheddar Crunch Topping over filling. To prevent overbrowning, cover pie edge with foil. Bake pie for 40 minutes. Remove foil. Bake about 20 minutes more or until top is golden brown and fruit is tender. Cool on a wire rack.
6. Makes 8 servings
7. Cheddar Crunch Topping: In a medium bowl, stir together 3/4 cup sugar, 3/4 cup all-purpose flour, and 1/4 teaspoon salt. Using a pastry blender, cut in 1/3 cup butter until mixture is crumbly. Gently stir in 1 cup finely shredded cheddar cheese (4 ounces).

Make a big apple crisp. Serve it warm with vanilla ice cream, and if there are leftovers they’re great for breakfast!!
APPLE TREESFor that amount of apples I’d use either a large casserole dish or maybe a 9″x13″ lasagna type dish.
First cut together 3/4 cup butter, 1 1/2 cup brown sugar, 1 1/2 cup rolled oats and a sprinkling of cinnamon and some nutmeg too if you like.
Then peel and cut up all your apples. (Don’t worry about slicing the apples evenly, chunky is best!) Heap them in the baking dish. Sprinkle your oat topping evenly over the apples.
Bake at 350°F for about an hour, could take longer if you used a deeper dish. Just check for done by sticking a knife in the middle, when the apples are completely soft it’s ready.
Just let it cool for at least 20 minutes before you serve it or else the sugary juice from the apples will burn you!!
