Just wondering if anyone has tried this. I love honeycrisps but they are sold in big bags & I really don’t want to eat raw apples for days on end. What else can honeycrisps be made with? TIA!

Honeycrisp are great for sauce, pies and other recipes. This recipe uses cider and cranberries for something different.
APPLE TREESHoneycrisp Apple Sauce:
8-10 honeycrisp apples (or your favorite variety)
1/2 cup apple cider
1/4 cup dried cranberries
With a vegetable peeler, remove a swirl of skin from each the apples, leaving about half of the skin intact. Cut the flesh away from the core of each. Compost the core and chop the flesh into bite sized chunks. Place the apple chunks, the cider and the cranberries in a pot over medium high heat. Bring to a simmer. Cover the pot and reduce the heat to medium-low. Cook, stirring occasionally, for about 30 minutes or until the apples are extremely soft and saucy. At this point you may keep it really chunky “as is”, or stir it down with a potato masher, or puree it in a food processor or food mill, depending on your style! The applesauce should taste perfect, but feel free to season to taste with honey or maple syrup if you desire. Serve this tart and perfect side dish with crispy smashed potato pancakes, sour cream and oh, maybe sausages or sauerkraut.

Double Crust Honeycrisp Apple Pie
•Premade refrigerated pie crusts (two in a pack)
•5 Honeycrisp apples or any semi-sweet apples
•2 tbsp lemon juice
•3 tbsp all-purpose flour
•1/4 cup sugar, more for dusting
•3 tbsp cold butter, diced
•1/4 tsp ground cinnamon
•2 tbsp whole milk or heavy cream plus more for brushing
Preheat oven to 425F.
If pie pastry is frozen, follow proper methods for defrosting and keep refrigerated until ready to use.
Make sure to begin with cold pastry dough only.
Peel, seed and core all apples. Place apples in a bowl and sprinkle lemon juice to prevent discoloring.
Next, add flour and mix well. Add sugar to coat and mix gently.
Place one round sheet of pastry dough on bottom of pie dish.
Gently use the tips of your fingers to press the dough outwards so that some is pushed past outer edges of dish.
Place apple mixture in the pastry dish and spread evenly. Place diced butter in various places underneath the apples. Then add butter on top of the apples.
Place second sheet of round pastry dough on top. With the tips of your fingers, press into the bottom layer of pastry dough and crimp. Continue all the way around until you have finished.
Using a straight-edge knife cut four slits into the pie’s top layer of dough. Brush the entire surface with milk and dust with sugar.
Bake for 15 minutes. Reduce heat to 350F, cover the crust with a guard or aluminum foil and bake for one hour or until crust surface is golden brown. Allow to cool completely before serving.

Oriental Apple Chicken Salad
•2 cups diced Granny Smith apples (or Honeycrisp)
•3/4 cup sesame ginger salad dressing
•2 medium chicken breasts cooked and shredded
•4-ounce can crushed pineapple with juice
•1/2 cup golden raisins
•1 cup mayonnaise
•2 tbsp fresh lemon juice
•1/4 cup chopped scallions
•1/2 cup chopped mixed nuts
•1 tsp. paprika
•1/2 cup diced celery
•1 diced medium green pepper
•1/2 diced medium red onion
Put two cups diced Granny Smith apples into a bowl.
Add the lemon juice and salad dressing. Stir to combine. Add the chicken, pineapple with juice and mayonnaise. Stir.
Then add the red onion, celery and pepper to the mixture. Add scallions, raisins, mixed nuts and paprika. Gently stir until all ingredients are combined. Place in the refrigerator for at least one hour to chill.

Apple Pie with Praline Topping
•1, 15-ounce package refrigerated pie crusts
•3/4 cup granulated sugar
•1/4 cup all-purpose flour
•1 tsp ground cinnamon
•6 cups peeled and sliced tart baking apples (Honeycrisp, if possible)
•2 tbsp butter, cut up
Topping:
•1/4 cup butter
•1/2 cup firmly packed light brown sugar
•2 tbsp whipping cream
•1/2 cup chopped pecans
Fit one pie crust into a 9-inch pie plate according to package directions.
Stir together sugar, flour, and cinnamon. Stir in apples; spoon mixture into crust. Dot the mixture with 2 tablespoons of butter. Top with remaining piecrust; fold edges under, and crimp.
Cut several slits in top.
Bake pie at 350F for 50 to 65 minutes, shielding with aluminum foil, if needed, to prevent excessive browning. Remove from oven.
Melt 1/4 cup butter in a small saucepan; stir in brown sugar and whipping cream. Bring to a boil over medium heat, stirring constantly; cook one minute, and remove from heat.
Stir in pecans, and let stand five minutes. Slowly drizzle mixture over pie. Bake for an additional five minutes.
This recipe serves six to eight.
Can You Make Good Applesauce Using Honeycrisp Apples?

They should be pretty good, a bit sweet for an apple sauce but if you like it on the sweeter side it would be good.
APPLE TREESIf you are going to make applesauce I think you should go a step further and make apple butter.
I think using a honey crisp for apple sauce is a waste but that is just my opinion.
Try making an apple crisp, I would mix in a Granny Smith for tartness though.
You could try freezing them. I would peel, core and slice the apples. Add a bit of lemon juice to prevent browning. A bit of sugar. Allow to sit for a bit let the juices begin to form. Bag up the apples and freeze.
Use for pies, crisps, cakes later on. (I took the idea of adding sugar form an episode of Good Eats I saw last night it will keep the apples from getting mushy. At least it should, Alton Brown was doing a peach episode and he did this for peaches. It should work with apples.)

I like to make applesauce out of my fave apples. Which is fuji. You can use what ever type you like. There are no rules. You can even use them in pies, crisps or baked. Anything that you calls for apples.

I just made some excellent baked apples with honeycrisps. I see no reason why they would not also be great for applesauce, pies, apple cake, muffins or whatever you like.

Honey crisps are awefully expensive to make into apple sauce.
