I’ve kept caramel apples in my fridge for up to 10 days. What makes them go bad is the apple itself. So it really depends upon how fresh and crisp your apples are when you start. As you know, some apples keep better/longer than others!

Use unbruised apples and you’ll be able to keep them for 2 weeks in the fridge.

if you are wrapping them individually after you make them they will be good for 2-3 days as long as you make sure it isn’t too hot or too cold

If your apples are fresh, I’d feel comfortable storing them for a week in the fridge, like regular apples. Just be sure to take them out far enough ahead of time that they have time to warm up a bit (so your caramel isn’t too hard).
